- 1 cup utazi leaves, chopped

- 1 tablespoon ogiri (optional)
- 2 scotch bonnet peppers, finely chopped
- 1 teaspoon calabash nutmeg (ehuru), ground
- 1 teaspoon potash (akanwu)
- 2 seasoning cubes
- Salt, to taste

- Start by thoroughly cleaning the cow foot. Place it in a pot of water, add salt, and boil until tender (approximately 2 hours).
- Once cooked, remove the cow foot, let it cool, and chop it into bite-sized pieces.
- In a separate bowl, mix palm oil with potash until you achieve an emulsion. This is key for the perfect texture.
- Add chopped cow foot, crayfish, utazi leaves, scotch bonnet, and season with cubes and salt. Stir well to combine.
- For a deeper flavor, add ogiri at this stage if using, and mix thoroughly to ensure even distribution.
